The Catuai variant is one of the many Arabica coffee subspecies . It was created in the 1940s as a hybrid of the Caturra and Mundo Novo variants, the goal was to create a smaller-sized but equally good-yielding shrub (thereby achieving a higher yield in the same area).

It started to spread in the 1970s, and it is one of the basic variants in Guatemala. It came to Panama relatively late, but, like the geisha variant, it also showed special characteristics here. The taste of the yellow variant differs less from the original red (although, as is always the case with coffee, there can be huge differences between the area, weather, vintage), but it generally has a softer taste. Unfortunately, Catuai is very sensitive to coffee's nemesis, the attack of a fungus called leaf rust, so the future of the variety is in serious danger everywhere in the world.

The coffee was harvested by hand, and after 72 hours of fermentation, it was dried in the sun for 28 days.

WHAT MAKES Piedra De lino SPECIAL?

The Santa Elena Estate is located on the emblematic slopes of the Piedra de Lino Mountains, in the Boquete Valley of the Chiriqui Province of Panama. This region is world famous for the coffees grown here, and especially for the geisha variety grown here. 20% of the region at an altitude of 1,200-1,550 meters above sea level is rainforest.

The local climate is characterized by a year-round temperature of 17-24ºC, which is perfect for Arabica coffee varieties .

The estate was founded more than 100 years ago by the ancestors of the current owners. From the very beginning, sustainability and the maintenance of a livable environment , dense vegetation and the biodiversity of wild animals have been a priority. Add to this the volcanic, mineral-rich soil, the winds blowing alternately from the two oceans, and the abundant rainfall, so you can truly say that everything has come together to grow the perfect coffee plant ! In addition to coffee, other plants and vegetables are also grown on the farm, which, in addition to increasing biodiversity, also stabilizes income, i.e. there is no compulsion in the direction of "even more coffee", which would be at the expense of quality.

We met Roberto from the Santa Elena estate in Panama (the son of one of the current owners, the grandson of one of the founding great-grandfathers ) at the World of Coffee exhibition in Athens. We corresponded a lot with them, over time we developed a very good relationship. All of their coffees are special, so it is almost certain that we will work with them again!

Let's perhaps start with why the name of this product line is Treat Selection. Here we collect special coffees, which are real "reward snacks" for fans of specialty coffees. Farm- and sometimes vineyard-selected coffees, direct contact with producers, experimental processing methods: i.e. everything that makes even a specialty coffee special. We are proud that these coffees (mostly not available elsewhere) can provide an experience at the push of a button in anyone's kitchen, which only the most professional baristas can do in the best cafes! These coffees are only available in limited quantities, we always work from a given quantity, with one-off production. If it's gone from here, we won't be able to drink any more ourselves!

SAMURAI RECOMMENDATION FOR PIEDRA DE LINO

SAMURAI Tip

Before you start making coffee, make sure that your machine is clean! (there are no capsules in it, you washed out the water, etc.). Without a capsule, start a short program to wash out the oils and other substances left in it from previous coffees!

Insert the capsule and use the short button to prepare a drink of 25-30 ml (about 20-25 grams). It is important that if you want a long coffee, do not use the long button, but make a short coffee, then drop the capsule, and by pressing the short button again, steep your finished coffee with hot water.

This is important because with the long button you overextract the coffee, which can lose its most valuable flavor notes!

Espresso

Thanks to the nature of the variety, we get a very fragrant, sweet coffee. It's worth waiting with it after preparation, because it doesn't really show what it can do when it's hot at first, you have to let it cool down a bit. Only 35 kg came to us, you can buy it while the stock lasts (there will be another kind of Treat selection coffee after that, but there won't be any more!) It gives both specialty fans and those familiar with special coffees a very good experience!

Are the capsules suitable for all capsule machines?

No, only in coffee machines compatible with the Nespresso* Original system.

What is a specialty coffee capsule?

There are also many types of coffee, from cheaper mass coffees to rare coffee specialties of the highest, special quality. Coffees are classified according to an officially accepted point system, coffees with more than 80 points belong to the specialty category.

I heard that the aluminum capsule is not environmentally friendly. So why did you use an aluminum capsule?

From this point of view, aluminum is like other raw materials: it can be environmentally friendly if it is really collected selectively. Then it is 100% recyclable. Aluminum can be remelted an unlimited number of times and coffee capsules can be produced from it again and again, so it is one of the least burdensome solutions from an environmental point of view. At the same time, the aluminum capsule is the only one that ensures a perfect seal, i.e. the coffee inside does not come into contact with oxygen, and can therefore be stored for a very long time without quality deterioration. If you want to protect the environment, collect used capsules selectively or use Capsule Defuser !

Don't you have instant coffee?

Of course there is, since we roast the green coffee and the capsules are made from freshly ground, roasted coffee beans. Perfect capsules require a completely different roasting profile than a "traditional" coffee machine, which is why we do not sell our coffees in the form of coffee beans, since what is good for a capsule is not necessarily good for a press machine, and vice versa.

What should I do with used capsules?

Do not throw it in the trash! Aluminum is a valuable, reusable raw material. Place the coffee grounds from the capsules under your plants (blooming plants will love them) or compost them. Use the Capsule Defuser and separate the capsules, or throw them in a selective waste container!
